Always in the menu of last WE FOND OF GOOD FOOD, the bet in envisaged mouth was a cappuccino of celery in the Parmesan and its sparkling wine in the truffle! Just like that on the paper rather engaging not? A felt and classical marriage. I do not remember any more where from I had drawn this recipe but ok, there were "truffles" this could not be bad!

A prior test nevertheless left me sceptical! Marriage was more than strange, celery Parmesan ok, but at a stadium of cooking, it was necessary to add some coffee, and with true proportions the Parmesan, even less the celery, but far too much the coffee were not smelt.
Second trial with 10 times less coffee! There, I tested 3 combinations: with the Parmesan + the coffee re-dosed, not better, with celery Parmesan, yes but without more, and with celery truffles and juice of truffles, nice marriage but the mode of cooking of the celery concealed its taste!
As for the sparkling wine in the truffle, a Chantilly cream slightly glued together on the gelatine, not terrible either!

By looking nearly they see well that the sparkling wine lacks lightness.

Conclusion when

A very simple Chantilly cream, perfumed in the juice of truffles and with some grated truffle, on the photo they see that it is air, no? What? I am deliberately? You believe?.. Not serious, I cope!

I give you nevertheless 2 recipes.
The first one, r written and for the audacious. The second, such which, to recommend!
Besides, without the Chantilly cream, it is a delightful winter soup, a true culinary delight, especially if they stress the quantity of truffles!
In fact you have 3 recipes!

For a bet in mouth of 8 persons
Velout sauce:
75g of cokes, 1 bouquet garni, 50g of bacon, 1 roughly cut carrot, 1 clove of garlic, 1 onion pricked by 2 cloves, 1/3 of the bar of thick bouillon of poultry knorr, 5cl of whipping cream, juice of truffles.
To dip cokes one night in the cold water, to drain and to cook them with the decoration 25mn in the casserole times in 2 times their volume of water. Mix and add the cream, 1 small top of garlic, 5cl of juice of truffles. Rectify the flavouring and let get cold.

The Chantilly cream in the truffle:

Go up 15cl of whole whipping cream in Chantilly cream add to tone it 2 drops of gin or failing lemon juice. Incorporate 2cs juice of truffles, beat to give again a few bodies and to grate small truffle over . Blend with caution
Dressage:
Fill in with velout sauce of the small glasses, poach the Chantilly cream in the truffle over, decorate some shaving of truffles.

Print the recipe of the cappuccino of cokes

    This has very nice air, your recipe! Bravo for the courage which you had to need to test different versions cream dela in the celery!!! lol!
